Why not edit purchase unit costs?

I am probably just misunderstanding how something works. But, I am wondering on inventory items why can I not update the purchase unit cost after the item has been created?

 

I assume it’s because it will take the most recent purchase unit actual cost from historical purchases. But what if you haven’t purchased one ever and you need to update pricing for the coming year?

 

In this particular case, I am wanting to update a chemical mix cost based on a new formulation.

There is a tiny little + above the purchase unit cost. Clicking that allows you to change the unit cost.
