How do we approve an Optional Service from an Opportunity into a separate job or series of work tickets? 

This would be a separate add on service with a different scope of work and frequency of work.

How do we approve the optional service after we’ve already done the original work was done, invoiced, and the customer now decides later to do the add-on work?

If the original opportunity was a work order, you may copy the work order; delete the completed ticket and move the optional service to above. 

If the original opportunity has a change order with it. System won’t have the copy option.  Creating a new work order to mirror the original will be the solution.

SoboYiW is correct…..If the Opp was a contract…..creating a new Work Order to match the estimate and price of the optional service is your only real option.
